Here is another simple summer wine cocktail that turned out just delicious.
It has a patriotic twist, red, white and blue. Very refreshing and easy to make.
The wine was a New Zealand Sauvignon Blanc from The Wairau River Estate in Marlborough, New Zealand. It is an excellent wine in it's own right, and I don't think this is really what the wine maker had in wine, but it made a fabulous base for this watermelon, wine, blueberry cocktail, with a splash of Agave.
Here is the recipe.
I made a cup and a half of sweet seedless watermelon balls, but slices will do just fine. Filled a big pitcher 1/3 full with big ice cubes, dropped in the watermelon, poured in a half pint of fresh ripe local blueberries, then emptied the bottle of wine over all that.
A nice sharp, bright, citrusy wine with rich flavor like this Sauvignon Blanc from NZ is a perfect contrast to the deep fruit flavors.
I then let the whole thing sit in the freezer for about an hour to let the flavors meld. Oh, I added a little splash of Agave to round it all out. It was fabulous.
Wine drinks like this are pretty flexible, the measurements or the combination of wine and fruit does not need to be that precise.
The idea is to have fun.
Wairau River Estate is a pretty exciting vineyard. They produce an very enticing array of wines, mostly white. We liked this Sauvignon Blanc a lot. Very well balanced and rich with flavor.
